Oreo Cheesecake Cupcakes


2 250g Packages of Cream Cheese - Softened
1/2 cup Sugar
2 Lg. Eggs
12 Oreo Cookies
1 tsp Vanilla

Cupcake Cup Liners

Step 1:

Preheat oven to 350 degrees.

Set 2:

Line your cupcake tin with the cupcake liners.

Step 3:

Separate the Oreo cookies - place the plain half of each cookie into the bottom of each liner. (Outside of the cookie facing downward.)  Set aside the 12 halves with the cream.

Step 4:

In a medium bowl, add the sugar, eggs and vanilla to the softened cream cheese.  Mix on low for 30 seconds with a hand mixer - then beat for 90 seconds on medium speed, until mixture is smooth.

Step 5:

Add the remaining halves of the cookies into the mixture and continue to blend until cookies are mixed into the batter.

***TIP*** Break the cookie halves into 4's for easier blending.

Step 6:

Pour mixture into the Cupcake Liners, place in to preheated oven and bake for 25 minutes - or until center of the cheesecakes have began to set.

Step 7: 

Immediately remove Cheesecakes from the tin using a fork to scoop them out, and place on a tray.  Refrigerate for a minimum of 3 hours.

Baking Time: 25 minutes
Cooling/Setting Time: 3 hours
